V8 Smoothie

A healthy smoothie version of the popular V8 juice drink.

Ingredients

  • 1 medium tomato
  • 1 medium carrot
  • 1/2 beet (peeling optional)
  • 1 cup/handful parsley
  • 1 thumb sized hunk of ginger
  • 1/4 lemon, peeled
  • 1 medium stalk of celery
  • 1 cup/handful of spinach

Preparation

Step 1

Chop into at least reasonable sized chunks before placing in blender. Lower quality blenders will probably need more finely chopped ingredients.

Add ~8oz of water and some ice cubes.

Blend in parsley & celery first into a quick puree.

Add ginger and blend again until pureed.

Add the rest and blend & add water as needed for desired consistency.
