Peach Cobbler

I've tried many recipes on the family and we all agree that this one wins! Two notes:
1) I prefer a 13x9 pan to a 2 quart dish because I found that the batter did not always cook through when it was thicker in the dish. When in the 13x9 pan, it cooked better.
2) The recipe could handle a bit more batter. I plan to experiment with increasing the batter by 1/2.

Ingredients

  • Peach Mixture:
  • 8 fresh peaches, peeled, pitted & sliced
  • 1/4 cup sugar
  • 1/4 cup brown sugar
  • 1/4 tsp cinnamon
  • 1/8 tsp nutmeg
  • 1 tsp lemon juice
  • 2 tsp corn starch
  • Batter:
  • 1 cup flour
  • 1/4 cup sugar
  • 1/4 cup brown sugar
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 6 T unsalted butter, chilled & cut into small pieces (salted works fine, too)
  • 1/4 cup boiling water
  • Topping:
  • 3 T sugar
  • 1 tsp cinnamon

Step 1

1. Preheat oven to 425.
2. In large bowl, combine Peach mixture ingredients. Toss to coat evenly. Pour into 2 quart baking dish or 13x9 pan.
3. Bake in preheated oven for 10 minutes.
4. While peaches bake, in a large bowl, combine 1st five batter ingredients (flour, sugar, brown sugar, baking powder, salt).
Blend in butter with finger tips or pastry blender. Mix until it resembles coarse meal. Stir in boiling water until just combined.
5. Remove peaches from oven. Drop spoonfuls of batter over the top. Sprinkle entire cobbler with the sugar & cinnamon topping.

Bake 30 minutes - until golden brown.

Serve with whipped cream and/or ice cream.
