Ingredients
- For the mojito base:
- 3/4 cup lime juice
- 11/4 cup water
- 3/4 cup white rum
- 1/3 ciup Demerara sugar
- 1/2 oz angostura bitters
- 2 sprigs fresh mint
- 1 1/4 sheets gelatin (previously rehydrated in cold water)
- For the mojito foam:
- the mojito base (see previous step)
- 1 2-pint ISIfoaming canister
- 1 CO|2 cartridge
Preparation
Step 1
1. Add the sugar to a ¼ of the water and heat. Dissolve the sheets of gelatin in it.
2. Add all the remaining ingredients, except for the mint, to the above mixture.
3. Blend the mint, including the stems, with part of the mixture.
4. Add the part of the mixture with the mint to the rest of the mojito base.
For the mojito foam:
1. Strain and fill the canister using a funnel.
4. Foam and leave to rest in the fridge for 2 hours.
Final Steps & Preparation:
1. Serve in a frozen glass.
2. The waiter uses the canister to fill the glass in front of the guest.
