White Chocolate and Fennel Leaf

Ingredients

  • For the white chocolate and fennel sheet:
  • 10 leaves fresh fennel, each approx. 11/4"
  • 10 grains pink pepper
  • 1/3 cup white chocolate, melted
  • To finish:
  • 2 transparent sheets

Preparation

Step 1

For the white chocolate and fennel sheet:
1. Arrange the fennel leaves on a transparent sheet or PVC, leaving approx 1½ -2" between them.
2. Slightly crush the pink pepper grains and place on one side of each leaf.
3. Place the chocolate in a icing bag and cover each leaf.
4. Next, place another transparent sheet of the same size as the bottom one and press so that it is like a fossil.
5. Keep in the fridge without removing the transparent sheets.

Final Steps & Preparation:
1. Remove the transparent sheets once the chocolate is crystallized and serve.
