Rhubarb Crunch

Mine and Natalie's favorite..Shawn Fickert's Mother gave this to me years ago. She is now deceased and I think of her everytime we have it. Such a wonderful lady she was.

Ingredients

  • 4 cups rhubarb
  • 1 cup sugar
  • 2 Tbsp. flour
  • 2 Tbsp. butter
  • 1 cup sugar
  • 1 cup flour
  • 1 tsp. baking powder
  • 1/4 tsp. salt
  • 1/4 cup quick cooking oats
  • 1 egg

Preparation

Step 1

Pour 4 cups boiling water over rhubarb that has been placed in a colandar. Drain well for a few minutes. Mix sugar and flour with the rhubarb and place in buttered dish. Dot with the butter.

Mix the sugar, flour, baking powder, salt and oatmeal together, mix in egg until crumbly. Place on top of rhubarb mixture in pan and shake down thru the rhubarb. Bake at 375 degrees for 40 minutes or until the top is golden brown. Enjoy!
