Ingredients

  • 2 tsp dijon mustard
  • 1/3 cup crunchy peanut butter
  • 1 lb(500 G) pork tenderloin
  • 1/2 tsp(2 ml) salt
  • 1/4 tsp(1 ml)pepper
  • 2 tsp(10 ml) canola oil
  • 1/3 cup(75 ml)lime &chili cooked peanuts
  • finly slices green onions for garnish

Step 1

1.Praheat oven to 375 F(190 C).Mix mustard and peanut butter in a small dish and set aside.Season pork tenderloin with salt and pepper.Heat canola oil in a large skillet on medium-high heat and sear pork on all sides until browned.
2.Spread peanut butter mixture evenly over pork and roll tenderloin in peanuts.Place on parchment-paper-lined baking sheet and roast for 15 to 20 min.,until golden and temperature reaches 160 F(71 C)on a meat thermometer.
3. Let pork rest 5 min.,slice,garnish with green onions and serve.
