Triple Chocolate Chip Biscuits

The perfect chocolate chip cookie. Slightly crisp on the edges, soft and fudgy in the centre, and 'choc full' of dark and white chocolate chips.

Ingredients

  • 110 g butter
  • 1/2 cup brown sugar
  • 1/4 cup white sugar
  • 1 egg
  • 1 tsp vanilla essence
  • 1/4 cup cocoa
  • 1 cup plain flour
  • 1/2 tsp baking powder
  • 3/4 cup dark chocolate chips
  • 3/4 cup white chocolate chips

Preparation

Step 1

STEP 1 Preheat oven to 170°C and lightly grease two large baking trays.
STEP 2 In a large bowl, cream the butter and sugars, then add egg and vanilla and beat until fluffy.
STEP 3 Combine dry ingredients in a separate bowl, then mix into the wet ingredients until just incorporated.
STEP 4 Fold in the chocolate chips.
STEP 5 Using moistened hands, roll mixture into balls 2 cm in diameter, then flatten and place on baking trays.
STEP 6 Bake for 8-10 minutes, or until biscuits are firm around the edges but still soft in the centres.
STEP 7 Allow to cool on trays for 5 minutes, then transfer to cooling racks.
