Ingredients
- 2 lbs potatoes, peeled and diced
- 3/4 cup onion, diced
- 6 cups chicken broth
- 6 1/3 Tbsp butter
- 1/2 flour (little less)
- 1 cup milk
- potato flakes
- sour cream
- 2 cups shredded cheddar
- green onions

Preparation
Step 1
Put potatoes in pot. Cook onion in some bacon grease for about 6 mins. Add to pot of potatoes. Add chicken broth. Bring to boil. Reduce heat. Cook 10 mins.
In same skillet, melt 6 1/3 Tbsp butter. Add little less than 1/2 cup flour. Stir with a whisk. Add 1 cup milk. Pour in potatoes.
Add some potato flakes if necessary to thicken slightly. Add a few spoonfuls of sour cream and 2 cups shredded cheddar. Heat for a minute.
Top with green onions.
