Ingredients
- For the basic syrup:
- 2 oz sugar
- 1/4 cup water
- For the pork crackling coca:
- 2 oz rasher peppered bacon
- 1/2 cup basic syrup (see previous step)
- 20 roasted pine nuts
- 1 egg white
Preparation
Step 1
For the basic syrup:
1. Mix the water and sugar together in a pan and bring to the boil.
2. Remove from the heat and leave to cool.
For the pork crackling coca:
1. Remove the rind from the basin rasher and brush over any extra pepper.
2. Wrap in clingfilm and freeze.
3. Once frozen, use a machine slicer to cut the bacon lengthwise into 10 1/20" thick slices.
4. Plunge the bacon slice into syrup and arrange it on a baking tray lined with a Silpat.
5. Cover with another Silpat liner and bake with another baking tray on top at 300ºF for between 12-14 minutes
6. Cut the pine nuts in half and coat with egg white. Drain and arrange 4 halves over each bacon slice.
7. Remove the top baking tray and bake at 325ºF for 5-6 minutes. Leave to cool and then remove from the tray.
Final Steps & Preparation:
1. Serve vertically in a glass.
