Ingredients
- 4 pounds short ribs
- salt & pepper
- 2 Tbsp. of oil
- 1 1/2 cups chopped onion
- 1 cup chopped carrots
- 1 cup chopped celery
- 2 cups red wine
- 2 Tbsp. chopped garlic
- 2 sprigs fresh rosemary
- 2 Tbsp. tomato paste
- 2 cups beef broth
- 28 oz. canned tomatoes
- 1 bay leaf
- parsley
Preparation
Step 1
Salt and pepper short ribs. In a large heavy pot brown short ribs in oil. Remove and set aside.
In the same pot add onion, carrots & celery, cook until onion is translucent. Add wine and cook until the alcohol burns off. Add garlic, rosemary, tomato paste, tomatoes, both and bay leaf. Return short ribs, bring to a boil. Cover and simmer for 3 hours or until meat is tender. Take ribs out, remove bone and pull meat apart. Return to pot.
Serve over pasta or mashed potatoes
Can top with shredded cheese.
