Caramelized Sunflower Seeds

Ingredients

  • For the fried sunflower seeds:
  • 7 oz sunflower seeds
  • 1 cup 0.4º olive oil
  • For the caramelized sunflower seeds:
  • 1/3 cup sugar
  • 1/8 cup water
  • 7 oz fried sunflower seeds (see previous step)
  • 1/2 oz sunflower oil
  • For the paper cones:
  • 10 51/2 x 51/2" sheets cellophane

Preparation

Step 1

For the fried sunflower seeds:
1. Cover the seeds with cold oil and fry them over a low heat. Stir continuously until they are golden brown.
2. Drain and spread the seeds over the kitchen paper.

For the caramelized sunflower seeds:
1. Place the water and sugar in a pan and heat to 240ºF (thread point).
2. Add the sunflower seeds, remove from the heat and stir gently with a spatula until the sugar crystallizes and sticks and coats the seeds
3. Put the coated seeds into the widest pan you have and heat the seeds over a medium heat until it begins to caramelize and turns dark golden brown. Make sure that the seeds do not stick together.
4. When the seeds are caramelized, add the sunflower oil so that the seeds do not stick to each other.
5. Spread the caramelized seeds over a sheet of greaseproof paper so that it cools, making sure that you separate any seeds that have stuck together.
6. Season the hot sunflower seeds with salt.

For the paper cones:
1. Fold the paper to make a cone.

Final Steps & Preparation:
1. Fill the cellophane cones and arrange in a bowl with holes.
