Hazelnut Scarf

Ingredients

  • For the scarf dough:
  • 11/4 cup butter, softened
  • 1 1/3 cup icing sugar
  • 1/8 cup glucose
  • 1 cup orange juice
  • 1/4 cup Grand Marnier
  • 13/4 oz plain flour, sieved
  • For the fried hazelnuts:
  • 10 hazelnuts, peeled and roasted
  • 0.4 º olive oil
  • salt
  • To finish:
  • 2 oz hazelnuts, peeled and sliced

Preparation

Step 1

For the scarf dough:
1. Mix the softened butter with the glucose at 120ºF together with the icing sugar.
2. Add the flour, orange juice and the Grand Marnier.
3. Once the dough has rested (overnight), stir until all the ingredients are thoroughly mixed together.

For the fried hazelnuts:
1. Place the hazelnuts in a pan and cover them with oil. Heat over a gentle heat until they start to fry, stirring to make sure they do not burn.
2. When they are fried, drain and season with salt.

Final Steps & Preparation:
1. Fill an icing bag with the dough and piped small buttons onto a Silpat liner. Spread the buttons out slightly.
2. Sprinkle the sliced hazelnut on top and bake in the oven at 345ºF for 5 to 7 min.
3. Remove from the oven and while still hot, place a fried hazelnut in the middle and wrap it up so that the shape gives the impression of volume.
