Pressure Cooker Fried Rice

Ingredients

  • 1 tbsp butter (or oil)
  • 1 lg celery stalk, diced
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 egg
  • 1 C basmati rice (uncooked)
  • 1/4 C soy sauce
  • 1 1/2 C chicken stock
  • 1/2 C frozen peas or other preferred vegetable

Preparation

Step 1

Heat the pressure cooker on the meat setting.
Place the oil in the pot. Add the celery, onion and garlic. Saute 1 minute.

Add the egg and scramble it with the rest of the ingredients for 1-2 minutes.

Add the rice, soy sauce and chicken stock and stir well.

Clear the cook setting.

Place the lid on the unit and set the steam valve to closed.

Press the rice option and adjust the timer for 10 minutes.

When the unit is done cooking, carefully release the steam valve.

Remove the lid and stir in frozen peas or veggies.
