Thai-Style Coleslaw

Ingredients

  • 1 small head cabbage (1 pound)
  • 1/4 cup fresh lime juice
  • 1/4 cup fish sauce
  • 1 Tbsp minced garlic
  • 1 Tbsp sugar
  • 1 small red chile (like Thai), chopped or 1/2 tsp red chile flakes or more to taste
  • 1/4 cup chopped fresh mint

Preparation

Step 1

1. Discard any discolored outer leaves from the cabbage, cut into quarters, and remove the core. Cut across into thin ribbons or shred on the largest holes of a box grater or in a food processor with the shredding disk.

2. Whisk the lime juice, fish sauce, garlic, sugar, and chile together in a large bowl. Add the shredded cabbage and mint and toss with the dressing until completely coated. Serve immediately or cover and refrigerate until you are ready to serve.
