- 1 cup whole milk ricotta cheese
- 3/4 cup grated parmesan cheese
- 1 package (10 ounce) frozen chopped spinach, thawed and squeezed dry
- 1 large egg
- 1/2 teaspoon dried oregano
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
Preheat oven to 375. In small bowl, combine the first 8 ingredients, Place filling in each mini muffin cups.
Bake 20-25 minutes or until set.
