Strawberry Lemon Popsicles

  • 2 cups strawberries (frozen or fresh)
  • 1 cup milk
  • 2 tbs honey
  • 3 tbs lemon juice
  • 4 tbs honey
  • 1 1/2 cups water



Step 1

Use a blender to blend together the strawberries, milk and honey.
If using fresh strawberries:
Slice off the tops of the strawberries and add to blender with the milk and honey.
If using frozen strawberries:
Pour the strawberries in the blender. Pour in enough milk to cover the frozen strawberries so they will blend more smoothly. Melt honey in microwave unto pourable and smooth so it does not clump in blender due to the frozen strawberries.
Blend until smooth.
Pour strawberry mixture into popsicle molds only half way full.
Stick in freezer while making lemon mixture.
In a bowl melt the honey and lemon juice together in microwave and stir well. Add water and stir. Make sure no honey sticks to the bottom. Put the lemon mixture in the refrigerator until cold. Take out Popsicles and pour in the lemon mixture to fill them to the top. Put back in freeze and wait until they freeze which will probably be over night.
