Maple Syrup Chicken Skewers

Ingredients
- 1/4 cup soy sauce
- 1 tbsp yellow mustard
- 1 tbsp pink Himalayan salt
- 1 tsp cumin
- 1 tsp coriander
- 1/2 tsp turmeric
- 1 tbsp garlic powder
- 1 tbsp oregano
- 2 tbsp EVOO
- 3 lbs of boneless/skinless chicken thighs.
- 1/4 cup maple syrup
- 1-2 tbsp apple cider vinegar

Preparation
Step 1
1. Mix the first 9 ingredients well.
2. Add Chicken and marinate for 20 minutes.
3. Preheat oven at 450F.
4. Thread each piece of chicken on to a skewer.
5. Line two baking sheets with parchment paper.
6. Set your oven racks to the top half of the oven.
7. Place a rack over each one.
8. Arrange your chicken skewers on the racks.
9. In a jar or squeeze bottle shake up 1/4 cup maple syrup with 1-2 tbsp apple cider vinegar.
10. Pour liberally over chicken.
11. Roast at 450F for 10 minutes.
12. Rotate the pans.
13. Cook another 15 minutes.
