Ingredients

  • 1 tablespoon instant dry yeast
  • 4 cups whole grain rye flour
  • 1/2 teaspoon salt
  • 2 cups buttermilk
  • 3 tablespoons canola oil

Preparation

Step 1

In bowl, mix yeast, flour and salt. Microwave buttermilk until lukewarmp; stir in oil. Add to flour mixture. Knead 10 minutes until smooth, adding 1/2 cup more flour if needed. Place in oiled bowl, cover with plastic wrap and leave to rise in a warm place for 1-1/2 hours.

Knead lightly and transfer to greased loaf pan. Cover with plastic wrap and set aside for 1 hour to rise again. Bake at 350 degrees F. for about 45 minutes, brushing with water occasionally.

Makes 36 thin slices.
