  • 1/2 cup raisins
  • 1/4 cup butter
  • 1/2 cup lightly packed brown sugar
  • 1 cup corn syrup
  • 2 eggs, slightly beaten
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla

Step 1

Preheat oven to 375.

Place raisins in a bowl, pour sufficient boiling water to cover; let stand until plumped and then drain. Arrange in tart shells.

Mix together butter and brown sugar. Stir in corn syrup, eggs, salt and vanilla. Combine just until blended. Spoon into unbaked tart shells, filling each about 2/3 full.

Bake in preheated oven for 15 to 18 minutes. Do not allow filling to bubble over.
