    cups fresh blueberries

  • 3/4

    cup sugar

  • 2

    tablespoons butter

  • 2

    pounds peaches, peeled pitted and coarsely chopped, about 3 1/2 cups

  • 1/4

    cup packed light brown sugar

  • 1/4

    teaspoon nutmeg

  • 1

    teaspoon cinnamon

  • 1

    teaspoon salt

  • 1

    egg

  • 1

    tablespoon baking powder

  • 1

    cup flour

  • 1

    tablespoon vanilla

  • 1/2

    cup milk

Directions

Preheat oven to 375. Combine the blueberries in 1/2 cup sugar and the butter in a small saucepan over high heat. Cook stirring until a syrup forms, about 7 minutes. Remove from heat. Toss peaches with brown sugar, nutmeg, cinnamon and salt in a mixing bowl Spread in a 3 quart rectangle casserole. Spoon blueberries over. Mix 1/4 cup sugar and egg in a bowl. Beat. Add baking powder, flour, vanilla and milk. Beat well with a wire whisk until smooth and resembles a cake batter. Pour evenly over the blueberries. Bake 30 - 35 minutes Cool 10 minutes before serving.
