  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 cup cold butter
  • 1 egg
  • 2/3 cup milk



Step 1

In large bowl put flour, sugar, baking powder and salt. Add butter. Cut in until crumble. Make a well in center.

In small bowl beat egg until frothy. Stir in milk. Pour into well. Stir with a fork to form soft dough. Turn out on lightly floured surface. Knead 8-10 times. Press into 2 greased 8-inch layer pans, or for single serving size, cut 1-inch thick dough into 3-inch circles.

Bake in 425 oven for 15 minutes until risen and browned slightly. Cool.

Fill with sweetened fruit and top with more sweetened fruit and whipped cream. For individual circles, split in half, fill and top.
