Ingredients

  • For the lotus flower chips:
  • 7 oz lotus flowers
  • To finish:
  • 11/4 cup 0.4º olive oil
  • salt

Preparation

Step 1

For the lotus flower chips:
1. Arrange the lotus flowers in groups of 6 into columns. Wrap them in cling film and freeze.
2. Use the meat slicer to cut the frozen lotus flowers into 0.5 mm slices and place them in layers on a tray lined with waxed paper.

Final Steps & Preparation:
1. Fry the lotus flower slices in the oil at approximately 345ºF until they are golden. Remove from the oil and drain on kitchen paper.
2. Season with salt.
3. Arrange heaped up in a bowl.
