Ingredients
- For the prawn powder:
- 7 oz whole red prawns
- For the prawn crunch:
- 4 rice wafers
- 4 oz prawn powder (step above)
- 1 egg white
- To finish:
- 1 cup 0.4º olive oil
- salt

Preparation
Step 1
For the prawn powder:
1. Put the prawns in a blender and pound until they are puréed .
2. Put the mixture between two sheets of greaseproof paper and use a rolling pin to roll it out until it is 1/10" thick approximately. Remove the top sheet of paper.
3. Bake at 325ºF. Turn the baking tray round so the mixture dries uniformly and as quickly as possible, so it does not ferment.
4. Once dry, place in the blender and blend until you get a fine powder.
For the prawn crunch:
1. Using a brush, coat the rice wafers with the egg white and coat them with the prawn powder.
2. Cut the wafers into triangles using a knife.
3. Leave them to dry for 6 to 8 hours on top of the oven or at room temperature.
Final Steps & Preparation:
1. Quickly fry in hot oil (355ºF) until the cracker swells up, remove from the oil and drain on kitchen paper.
2. Sprinkle with salt to taste.
3. Just before serving, sprinkle with more prawn powder.
