Ingredients
- For the fried walnuts:
- 7 oz walnuts, shelled
- 1 cup 0.4º olive oil
- For the spicy caramelized walnuts:
- 11/2 cup sugar
- fried walnuts (see previous step)
- salt
- freshly-ground black pepper
- curry
Preparation
Step 1
For the fried walnuts:
1. Cover the walnuts with cold oil. Fry them over a gentle heat until they are golden color. Drain on kitchen paper
For the spicy caramelized walnuts:
1. Put the water and sugar into a pan and heat to 240ºF (thread point).
2. Add the walnuts and remove from the heat. Stir slowly with a spatula until the sugar crystallizes and coats the nuts.
3. Put the walnuts in the widest pan you have and begin to caramelize them over a medium heat, making sure that they do not stick together.
4. Spread the caramelized nuts over a piece of greaseproof paper to cool. Separate any that have stuck together.
5. Season with salt, pepper and curry while they are still hot.
Final Steps & Preparation:
1. Just before serving, sprinkle a little curry powder over them.
