Caramelized Hazelnuts

Ingredients

  • For the fried hazelnuts:
  • 4 oz hazelnuts, shelled
  • 1 cup 0.4º olive oil
  • For the caramelized hazelnuts:
  • 4 oz fried hazelnuts (see previous step)
  • 11/2 cup sugar
  • salt
  • freshly ground pepper
  • curry
  • 11/2 tbsp water

Preparation

Step 1

For the fried hazelnuts:
1. Cover the hazelnuts with cold oil. Fry them over a gentle heat until they are golden in color. Drain on kitchen paper.

For the caramelized hazelnuts:
1. Put the water and sugar into a pan and heat to 240ºF (thread point).
2. Add the hazelnuts and remove from the heat. Stir slowly with a spatula until the sugar crystallizes and coats the nuts.
3. Put the hazelnuts in the widest pan you have and begin to caramelize them over a medium heat, making sure that they do not stick together.
4. Spread the caramelized nuts over a piece of greaseproof paper to cool. Separate any that have stuck together.
5. Season with salt, pepper and curry while they are still hot.

Final Steps & Preparation:
1. Sprinkle with curry powder just before serving
