Ingredients
- For the Campari/Martini foam:
- 1 cup Martini Rosso
- 1 cup Campari
- 1/2 cup blood orange juice
- 2 1/2 sheets gelatin (previously rehydrated in cold water)
- 1 1/2 l ISI foaming canister
- 1 N|2O cartridge
- For the orange juice:
- 1 lb blood oranges
Preparation
Step 1
For the Campari/Martini foam:
1. Heat the blood orange juice and dissolve the gelatin in it.
2. Remove from the heat and mix with the remaining ingredients.
3. Sieve and fill the cartridge using a funnel.
4. Foam and leave to rest in the fridge for 2 hours.
For the orange juice:
1. Squeeze the oranges
2. Sieve the juice and place in the fridge.
Final Steps & Preparation:
1. Fill the glasses halfway with the very cold orange juice.
2. Top the glasses with the foam. It should not be too cold, as this would change its density.
