Passion Fruit Marshmallow

Ingredients

  • For the passion fruit marshmallow:
  • 3/4 cup passion fruit juice
  • 3/4 oz powdered gelatin
  • 2 cups sugar
  • 1 cup water
  • 2 egg whites
  • a pinch of salt
  • For the passion fruit reduction:
  • 1/2 cup passion fruit juice
  • 11/2 tbsp glucose

Preparation

Step 1

For the passion fruit marshmallow:
1. Mix the cold passion fruit juice and the powdered gelatin together.
2. Meanwhile, boil the sugar and water to 255ºF.
3. Add the first mixture (passion fruit/gelatin) to the syrup when comes off the boil.
4. Whisk the egg whites and a pinch of salt until you get a stiff meringue and then very slowly add the passion fruit syrup and fold it in as if you were making an Italian meringue.
5. Once it is folded in, cool in a drum.

For the passion fruit reduction:
1. Reduce the passion fruit juice, sugar and glucose in a saucepan.
2. Reduce over a gentle heat until you get a thick sauce with the consistency of liquid caramel.

Final Steps and Preparation:
1. Sprinkle a layer of icing sugar over a sheet of greaseproof paper. Use a icing bag to pipe tear shapes on the icing sugar.
2. Leave on one side until a film forms over the outside of the marshmallow, then use a spatula to lift off the teardrops and thread them onto a kebab stick.
3. When you are ready to serve them, place a drop of the passion fruit reduction in the center of the marshmallow.
