This is soooo good!! We make this quite a bit to go with turkey burgers.

This recipe makes about 6 cups - each cup is about 1 carb block.

It is very good as is but the dressing could probably be reduced to save some fat per serving

Ingredients

  • 3 cups green cabbage, shredded (1 c)
  • 1 cup red cabbage, shredded (1/2 c)
  • 3/4 c red onion, finely diced (1/2 c)
  • 2 Red Delicious apples, finely diced (4 c)
  • 1/2 cup light mayonnaise (24 f)
  • 1/3 cup white vinegar
  • 2 tablespoons plus 2 teaspoons fructose (we use 2 packets of Splenda)
  • 2 tablespoons plus 2 teaspoons Dijon mustard
  • 1/4 teaspoon salt
  • pinch white pepper

Preparation

Step 1

Combine the vegetables and apple in a large bowl and mix well.

Combine the remaining ingredients in a small bowl and mix well to make dressing.

Pour dressing over the vegetable mixture and toss until evenly coated. Cover tightly and chill before serving.
