Chocolate Chip Chiffon Cake

One of GREAT's spectacular cakes! I LOVED this cake and called it "Chocolate House Cake". (There was a house nearby that was white with dark brown "gingerbread" trim). Get set for lots of compliments on this!

Ingredients
- CAKE:
- 2-1/4 c. CAKE flour (lightly put into measuring cup - do NOT pack it in)
- 1-3/4 c. sugar
- 3 tsp. baking powder
- 1 tsp. salt
- Make a well and add in order:
- 1/2 c. vegetable oil
- 5 egg yolks
- 3/4 c. water
- 2 tsp. vanilla
- Beat with spoon until smooth.
- Measure following into large bowl:
- 7 or 8 egg whites
- 1/2 tsp. cream of tartar
- Whip until whites form very stiff peaks (Do NOT underbeat). Pour egg yolk mixture gradually into whipped egg whites, folding in with rubber scraper just until blended (Do NOT stir). Then gently fold i
- WHITE MOUNTAIN ICING:
- 1 c. sugar
- 1 Tb. white corn syrup
- 1/3 c. water
- Simmer in saucepan, stirring until sugar is dissolved; then cook slowly until syrup boils rapidly and spins a thread off the spoon....
- 2 egg whites, well beaten.
- Add small amount of syrup at a time, beating well, then add: 1 tsp. vanilla. Beat until spreading consistency (tastes like MARSHMELLOW)
- Melt 3 oz. chocolate squares (or chips) with 1 Tb. butter, and drizzle around the top of the cake (letting it drizzle down the sides)
- LOTS OF WORK, but you've never tasted a cake this good!! Looks professional
