in the south white cornmeal is used and no sugar added, most of us use yellow cornmeal and add sugar. try it with or without the sugar, using white or yellow cornmeal

- 2 cups cornmeal
- 2/3 cups flour
- 4 tsp. baking powder
- 1 +1/2 tsp. salt
- 1 +1/2 tsp. sugar (optional)
- 1 +2/3 cups buttermilk
- 4 eggs well beaten
- 6 Tbsp. butter melted

Preparation
Step 1
preheat oven to 400F
mix together dry ingredients, in a large bowl. add buttermilk, and eggs, using a wooden spoon, beat until thoroughtly mixed. add butter and stir until just mixed.
pour batter into a buttered cast-iron dish and bake until golden. firm to the touch and cracked on the top, about
30 minutes.
