Ingredients

  • Rib Rub:
  • 1 tbs garlic powder
  • 1 tbs onion powder
  • 1 tsp salt
  • 1 tbs cayenne pepper
  • 1 tbs black pepper
  • 1 tbs white pepper
  • 1 cup brown sugar
  • 1/2 cup smoked paprika
  • For cooking:
  • 4 pounds of ribs
  • olive oil
  • apple juice
  • BBQ sauce

Preparation

Step 1

Rub the rub onto meat side of ribs. Wrap in Plastic wrap and refrigerate overnight.

The day you cook the ribs take them out of refrigerator and let them come to room temp

Preheat oven to 275 degrees for 3 hours cooking
250 degrees for 4 hours of cooking
225 degrees for 6 hours of cooking

The longer you cook them the better, but you may not have time.

Place the ribs meat side up on a wire rack with a drip pan filled 3/4 full of water. You may have to add water towards the end.

After 1 1/2 hrs of cooking (NOT BEFORE) spritz or mop the ribs with a mixture of 3 parts apple juice and 1 part oil. Do this every 1/2 to 3/4 hour until done.

To test for donenss, you can look at the bones and watch for the meat to pull back from the ends OR you can use the toothpick test...insert a toothpick between the bones and if it goes through easily they are done.

Finally...always apply any sauces 20 minutes prior to eating. This will avoid the sugars burning and turning black.
