Ingredients
- 6 -strips of veal about 6x4 inches
- 1/2 cup bread crumbs
- 3 cloves minced garlic
- 1/4 cup parmesan grated or shaved
- salt and pepper to taste
- 1/2 cup chopped parsley (can use chopped spinach too)
- 6 -thin strips procuito (optional)
- twine
- olive oil

Preparation
Step 1
lay strips of veal out on wax paper, lie prociutto on top. in a bowl mix rest of ingredients, and spread in the middle of the strips length-wise. roll up like a jelly roll and tie together to keep the stuffing inside.
heat a skillet with enough oil to coat the pan, brown the braciole on all sides. i cook on medium heat with enough oil to prevent sticking. cook nearly through but do not burn. add to sauce to finish cooking about 2 hours before sauce is done.
