Ingredients

  • 6 -strips of veal about 6x4 inches
  • 1/2 cup bread crumbs
  • 3 cloves minced garlic
  • 1/4 cup parmesan grated or shaved
  • salt and pepper to taste
  • 1/2 cup chopped parsley (can use chopped spinach too)
  • 6 -thin strips procuito (optional)
  • twine
  • olive oil

Preparation

Step 1

lay strips of veal out on wax paper, lie prociutto on top. in a bowl mix rest of ingredients, and spread in the middle of the strips length-wise. roll up like a jelly roll and tie together to keep the stuffing inside.
heat a skillet with enough oil to coat the pan, brown the braciole on all sides. i cook on medium heat with enough oil to prevent sticking. cook nearly through but do not burn. add to sauce to finish cooking about 2 hours before sauce is done.
