Sesame Pork Tenderloin

Can be a fancy yet easy meal. We like it with garlic sauted canned white new potatoes and parmesan zucchini

Ingredients

  • 1/4 cup reduced sodium soy sauce
  • 1/4 unsweetened orange juice
  • 1 tbs peeled, minced ginger
  • 2 tbs honey
  • 1 clove garlic, minced
  • 2 (3/4 lbs) pork tenderloins
  • 3 tbs sesame seeds
  • 1/4 Mirin (Japanese rice wine)
  • 1/4 cup canned low sodium chicken broth, undiluted.
  • 2 tbs water
  • 2 teas cornstarch
  • Kumquats (optional)
  • Fresh Rosemary sprigs (optional)

Preparation

Step 1

1. Combine first 5 ingredients in a large zip-top heavy duty bag. Seal bag and shake well
2. Trim fat from pork, then add it to the bag, seal it and shake well.
3. Marinate in refrigerator for 8 hrs shaking bag occasionally.
4. Remove pork from marinade, reserving marinade.
5. Sprinkle pork evenly with sesame seeds.
6. Place on roasting pan, insert meat thermometer into thickest part of meat.
7. Bake at 350 degrees for 45-55 min. Thermometer should register 170 degrees.
8. Let stand for 15 minutes
9. Strain reserved marinade into medium saucepan. Bring to a boil, reduce heat and cook for 5 min.
10. Combine water and cornstarch. Add to marinade mixture stirring continuously until mixture thickens.
11. Slice pork diagonally into thin slices. Arrange on platter
12. Spoon sauce evenly over port
13 If desired, garnish with kumquats and fresh rosemary sprigs.
