Strawberry Glaze Pie

Ingredients

  • 1 8-inch, baked pie shell (cooled)
  • 2 pints fresh strawberries, washed and hulled
  • 1/2 cup sugar
  • dash of salt
  • 1 1/2 Tblsp. cornstarch
  • 1 Tblsp. lemon juice
  • 1 (8 oz.) cream cheese, softened
  • 1/2 cup milk

Preparation

Step 1

Slice enough strawberries to fill one cup. Place in saucepan with sugar, salt and 1/4 cup water. Bring to boil and cook for 3 mins.; remove from heat. Mix cornstarch and 1/4 cup water. Stir in berries, and continue to cook until thick, about 2 mins. Add lemon juice and cool to room temperature.

Beat cream cheese with milk until smooth. Spread onto bottom of cooled pie shell.

Cover with half the glaze. Cover with half the glaze.

Arrange reserved whole strawberries on top, stem ends down. Spoon remaining glaze over berries.

Chill at least 2 hrs,

Serves 6.
