Spanish Rice

If using brown rice cooks for 30-50

Ingredients

  • 1 medium onion diced
  • 1/2 red pepper diced
  • 1/2 green pepper diced
  • 1 tbsp oil
  • 1 cup raw rice (brown or white)
  • 2 1/4 cups boiling water
  • 1 8oz can tomato sauce
  • A dash of salt

Preparation

Step 1

In a medium size pot sauté onions and peppers in the oil until soft or browned
Add rice and stir for 3 minutes
Pour into boiling water and tomato sauce
Stir
Cover and lower flame
Cook for 30 minutes but checking to see if liquid is absorbed
After cooked add salt lightly
