Chocolate Raspberry Muffins

  • 1/2 cup margarine, softened
  • 1 cup sugar
  • 2 eggs
  • 1/2 cup sour cream
  • 1/2 cup raspberry sauce
  • 2 cups all purpose flour
  • 6 tbl cocoa
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 cup chocolate chips, melted with 2 tbl water
  • 3/4 cup chocolate chips

Step 1

In a mixing bowl, cream butter and sugar. Add eggs, one at a time, beating well after each addition. Beat in the sour cream, raspberry sauce and melted chocolate. Combine the flour, cocoa, baking powder and baking soda; stir into creamed mixture along with chocolate chips just until moistened. Fill paper lined muffin cups 3/4 full. Bake at 400 degrees for 15-20 minutes or until toothpick inserted comes out clean.
