- 1 pound fresh okra
- 3/4 cup low-fat buttermilk
- 1 large egg
- 1 cup fine yellow cornmeal
- 3/4 teaspoon kosher salt
- 1/2 teaspoon pepper
- 2 tablespoons canola oil
- Cooking spray

Step 1
Preheat oven to 450°F with baking sheet in oven.
Gently smash fresh okra.
Whisk together low-fat buttermilk and 1 large egg in a bowl.
Add okra; let stand 3 minutes.
Combine fine yellow cornmeal, kosher salt, and pepper in a bowl; dredge okra in mixture.
Add canola oil to hot pan; tilt pan to coat.
Add okra; coat with cooking spray.
Bake until crisp, 25 to 30 minutes, turning once.
