Sides: Carrot Souffle
Delicious dish! Especially for people that say they don’t like carrots!

Ingredients
- 1 lb carrots peeled and sliced
- 1/2 cup melted butter
- 3 eggs
- 1/3 cup sugar (can substitute Stevia)
- 3TBS flour
- 1 tsp baking powder
- 1/2 tsp vanilla
Preparation
Step 1
Steam carrots over boiling salted water until very soft. In a food processor or blender, combine carrots and butter, blend until smooth. Add remaining ingredients and blend well. Spoon into lightly greased1qt. Shallow baking dish. Bake at 350 degrees for 45 minutes. Serves. 6-8.
