Ingredients
- 2 ears of corn, husked
- 2 oz crumbled queso fresco
- 1/4 cup finely chopped red onion
- 2 tsp olive oil
- 1 tsp lime zest
- salt and pepper

Step 1
Prepare a grill for medium high heat. Grill corn, turning occasionally until lightly charred, 5-8 minutes. Let cool. Cut kernels off cobs and toss with remaining ingredients. Add salt and pepper to taste.
