Nhoques de Forno (Brazilian Potato & Ham Pie)

Ingredients

  • 8 medium potatoes, peeled and quartered
  • 1 tsp salt
  • 1 cup warm milk
  • 2 TBS butter, melted
  • 2 eggs, lightly beaten
  • 1/2 cup mild cheddar cheese, grated
  • 3 TBS cornstarch
  • 3 TBS flour
  • 1/2 tsp salt
  • Cooking spray
  • 1/2 lb thinly sliced ham
  • 1/2 lb thinly sliced mozzarella cheese

Preparation

Step 1

1. Place potatoes and salt in a large saucepan with water to cover. Bring water to boil over medium-high heat. Reduce heat to medium-low and cook until potatoes are cooked through and soft. Drain potatoes in a colander.

2. Place potatoes in the bowl of an electric mixer. Add warm milk, melted butter, eggs, cheddar cheese, cornstarch, flour, and salt. Mix on low speed until smooth.'

3. Preheat oven to 300F. Coat a 9X13 baking dish with cooking spray. Spread half of the potato mixture in dish. Top with ham slices, then mozzarella. Spread remaining potato mixture on top and bake for 30 minutes. Remove from oven and serve hot.
