Ingredients

    c. Flour plus extra for kneading

  • 1

    tsp. Baking Powder

  • 1/4

    tsp. Baking Soda

  • 1 1/2

    T. Sugar

  • 1

    T. Rapid Rise Yeast

  • 1/2

    tsp. Salt

  • 1

    Egg

  • 1/2

    c. Buttermilk

  • 1/2

    tsp. Vanilla

  • Oil

Directions

Combine Flour, Baking Powder, Baking Soda, Salt, Sugar, and Yeast. In a small bowl, whisk Egg, Buttermilk, and Vanilla. Add Egg mixture to Flour and stir until incorporated. The dough will be sticky. On a lightly floured surface, knead dough until smooth and slightly sticky to the touch, adding more flour if necessary. Transfer to clean bowl. Cover with plastic wrap and let rest until doubled in size, 1 ½ to 2 hours. Punch down the dough and turn onto a lightly floured surface. Using hands, pat down dough and form into oval shape, about ¼ inch thick. Cut into 1 ½ inch squares. Cook beignets in a deep fryer or electric skillet. Preheat 2 inches of oil to 370º. Fry pieces of dough in batches 1 minute on each side, or until evenly golden brown. Transfer beignets to a tray lined with paper towels to drain. Dust with Cinnamon and powdered sugar, and serve with carmel dipping sauce.
