Ingredients
- Popular Waffles:
- 2 eggs
- 2 c. buttermilk or sour milk (see below)
- 1 3/4 c. white flour
- 1 c. whole wheat flour
- 2 tsp. baking powder
- 1 tsp. soda
- 1/2 tsp. salt
- 1/4 c. plus 2 Tblsp. shortening
- (I use oil)
- Richer Waffles:
- 3 eggs
- 1 1/2 c. buttermilk
- 1 3/4 c. flour
- 2 tsp. baking powder
- 1 tsp. soda
- 1/2 tsp. salt
- 1/2 c. shortening (or oil)

Preparation
Step 1
Heat waffle iron.
Beat eggs; beat in remaining ingredients with beater until smooth.
Pour batter onto center of hot waffle iron.
Bake about 5 mins. or until steaming stops. Remove waffle carefully.
* Note: To substitute milk for buttermilk, separate eggs, beating egg whites until stiff; increase baking powder to 4 tsp.; omit soda & fold egg whites into batter.
* I sometimes substitute sour milk for the buttermilk if I am out. About 1 Tblsp. vinegar to 1 c. milk and let set to sour about 5 mins. Use the same as buttermilk.
