Passover Apple Cake

Ingredients

  • Cake ingredients:
  • 4 eggs
  • 2 cups vegetable oil
  • 2 cups white sugar
  • 3 cups matzo meal
  • 1 cup potato starch
  • Apple filling:
  • 8 large Granny Smith Apples cored, peeled and sliced
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg

Preparation

Step 1

Preheat oven to 350.
Spray 9 x 13 pan.
Combine all cake ingredients and mix well. Divide in half.
In a separate bowl toss apples with the mixture of cinnamon brown sugar and nutmeg.
Layer half the batter on the bottom of the prepared pan. Pour apples into the pan and then pat remaining half of the cake batter over the apples to cover. Bake for 45 minutes. Cool completely. Serve with Cool Whip.
