Ingredients

  • Topping:
  • 1/2 cup sugar
  • 1 tbsp butter
  • 1 tsp cinnamon
  • Cake:
  • 1/2 cup butter
  • 1 – 1/2 cups brown sugar
  • 1 egg, beaten
  • 2 cups flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup sour cream
  • 1 – 1/2 cups rhubarb, cut into 1” lengths

Preparation

Step 1

1. Preheat oven to 350 F.

2. In a small bowl mix topping ingredients together. Set aside.

3. In a large mixing bowl cream butter, adding the brown sugar and egg. Add flour, baking soda and salt, alternating with sour cream. Mix thoroughly. Add rhubarb and mix to distribute evenly.

4. Pour batter into a greased and floured 9” x 13” pan. Sprinkle with topping.

5. Bake 40 – 50 minutes, or until knife inserted in center comes out clean.
