Gluten Free Homemade Pasta

Ingredients
- 1/3 cup tapioca flour
- 1/3 cup cornstarch
- 2 tbsp. potato starch
- 1/2 tsp. sea salt
- 1 tbsp. xanthan gum
- 2 eggs
- 1 tbsp. vegetable oil

Step 1
1. Combine flours, sea salt, and xanthan gum.
2. In a separate bowl lightly beat eggs and oil. Add the egg mixture to the flour mixture and mix well until a firm ball forms. Knead the dough for a minute or two.
3. Place dough on bread board and roll out as thin as possible. Cut into desired noodles; or use your pasta machine according to its instructions.
4. Cook the pasta in salted boiling water to which 1 tbsp. of oil has been added for 10 to 20 minutes depending on the thickness and size of the noodles. You can also freeze the uncooked pasta for later use.
