Ingredients
- 2 cups brown rice flour
- 2 cups sorghum flour
- 1 cup amaranth flour
- 1 cup tapioca starch
- 1/2 cup granulated sugar
- 1 tbsp. xanthan gum
- 1/4 cup baking powder
- 1 tbsp. baking soda
- 2 tsp. salt
- 2 cups shortening or margarine

Preparation
Step 1
1. In a large bowl combine all ingredients except for the shortening and mix well. Using a pastry blender or 2 knives cut in the shortening until the mixture resembles coarse crumbs about the size of small peas.
2. Immediately divide the mixture into 8 equal portions (1 – ¼ cups each) and seal tightly in plastic bags, removing as much air as possible. Store at room temperature for up to 3 days or freeze for up to 6 months.
