Ingredients

  • 2

    cups brown rice flour

  • 2

    cups sorghum flour

  • 1

    cup amaranth flour

  • 1

    cup tapioca starch

  • 1/2

    cup granulated sugar

  • 1

    tbsp. xanthan gum

  • 1/4

    cup baking powder

  • 1

    tbsp. baking soda

  • 2

    tsp. salt

  • 2

    cups shortening or margarine

Directions

1. In a large bowl combine all ingredients except for the shortening and mix well. Using a pastry blender or 2 knives cut in the shortening until the mixture resembles coarse crumbs about the size of small peas. 2. Immediately divide the mixture into 8 equal portions (1 – ¼ cups each) and seal tightly in plastic bags, removing as much air as possible. Store at room temperature for up to 3 days or freeze for up to 6 months.
