An all purpose gluten free flour that can be substituted cup for cup for regular wheat flours.

Ingredients
- 3 cups white rice flour
- 1 cup sweet rice flour
- 1 cup defatted soy flour
- 1 cup corn starch
- 1 cup tapioca starch
- 1 cup potato starch
- 1 tbsp. xanthan gum
- 1 tbsp. guar gum

Preparation
Step 1
1. Sift all ingredients together several times to blend well. Store in an airtight container.
2. Use cup for cup in recipes that normally use white (wheat) flour.
Tips:
1. Increase the amount of baking powder in the recipe by 50%. (e.g. if the recipe calls for 1 tsp, use 1 ½ tsp)
2. If the recipe calls for 2 eggs use 3 instead.
