Ingredients

  • 2 cups Gluten Free Flour Mix #1
  • 2 tsp. xanthan gum
  • 1 tbsp. baking powder
  • 1 tsp. salt
  • 1/2 cup shortening
  • 1-1/2 cups white sugar
  • 3 eggs
  • 1 tsp. vanilla extract
  • 1 cup milk

Preparation

Step 1

1. Preheat oven to 350 degrees F. Grease and flour pans (9”x13”; 2 x 9” round; 13”x17” jelly roll pan; 24 cupcakes)

2. Combine flour, xanthan, baking powder, and salt in a medium bowl.

3. Cream shortening and sugar in a mixing bowl. Beat in the eggs and vanilla.

4. Add in the dry ingredients and the milk; mix will scraping the sides of the bowl as necessary. Pour batter into baking pans.

5. Bake until tester inserted in the middle of cake comes out clean, or until cake springs back when touched; about 35 minutes for 9” round pans and 18 minutes for cupcakes.
