Ingredients

  • 1/4 cup chopped onion
  • 1/4 cup chopped green pepper
  • 2 Tbsp cooking oil
  • 1 cup uncooked long grain rice, or
  • Organic Harvest Medley Rice is a good, optional
  • 1 cup tomatoes with green chilies (small can chilies-for more spice, opt)
  • 1/4 tsp. ground turmeric
  • 1 tsp. ground cumin
  • 1/2 tsp. salt
  • 1/4 tsp. garlic powder
  • 1 3/4 to 2 cups water (depends on the rice that is used.
  • 2 to 3 Tbsp. chopped fresh cilantro, optional

Preparation

Step 1

In a skillet, saute onion and green pepper in oil for about 2 min.
Add rice and stir until coated with oil.
Add tomatoes, turmeric, cumin, salt, garlic powder and water; bring to a boil.
Reduce heat and simmer, covered, about 20 minutes or until liquid is absorbed. Add cilantro if desired.
